Lately I have been reading articles that butter may be not as bad as nutritionists were predicting in the past. Apparently butter comes with vital vitamins such as vitamins A, D and K. These fat-soluble vitamins are absolutely essential to build bones. Also, did you know that our brains are 65% cholesterol? Butter is a main source of cholesterol and literally helps us think.
Mark Bittman raised his writing voice about butter here, suggesting that butter is back.
Bring on the butter
Indeed, there is tons of info and endless opinions on the good versus bad when it comes to butter. My current opinion is that what’s important is the amount and quality of the butter. One thing is for sure: bye-bye “I Can’t Believe It’s Not Butter” and other fake spreadable fats. In my house we’re cool with real butter until further notice! My favorite butter is bought at the local farmers market. It has a deep satisfying flavor and you even can pick up earthy flavor nuances--it’s as if the cows ate on juicy, herb-laden pastures.
I have a good amount of butter in my own fridge. One of the reasons for that is to satisfy my 4 ½-year-old daughter’s appetite for it. For her it's more like which foods can be eaten on a hunk of butter versus the other way around. Whole grain waffles, oatmeal, broccoli, corn and carrots are here favorite meals right now so long there is plenty of butter on it. To me she has a good point: butter provides a very satisfying mouth-feel, hits a high flavor note and, yes, we feel that butter makes food much more enjoyable to us. Granted, my daughter is still a kid and she can consume butter because of the pace she grows. Indeed, sometimes it happens that I don't see here for 3-4 days because of my busy work schedule and after that she seems to have sprouted a fraction of an inch again. For the rest of us adults it may be smarter to diversify excessive butter consumption with plant-based oils such as olive oil. If not, excessive butter intake will likely become evident on the belt line and in the blood.
